Goat cheese pizza.. yummm
I love goat cheese pizza! and I love easy peasy cooking! You can't get much easier than my concoction. It's very flexible and you can use whatever veggies are in the fridge.
Start with a Naan bread (I like this best) - or pre-made crust, like Boboli
Place it on a pizza stone, or baking sheet
Brush with olive oil
Sprinkle with favorite herbs; oregano, basil, etc (fresh or dried)
Cover this with:
thinly sliced tomatoes
thinly sliced onion - I like red, but I just use whatever I have
thinly sliced squash, red peppers, mushrooms (all optional - and I use whatever I have in the fridge)
Then put small chunks of fresh goat cheese all over it
Sprinkle with more herbs, salt and pepper
Bake at 400-degrees for around 15 to 20 minutes, or until the crust is golden and crispy, and the goat-cheese chunks are wearing brown caps
Let it sit for a few minutes; slice and enjoy.

We are Confused...
Hey, it's me Casper! Finally our mom let us get back on her computer - we've missed you all - I know you must have been missing me! -- oh yeah, and Angel, too.
It's been a confusing week for us. Let me tell you about it... Our mom came home Monday evening and we heard her on the phone with our big human brother talking about having implant surgery earlier in the day..'no, it's not too painful'; 'doctor said healing was pretty quick', etc.
Now, here's where the confusion comes in. Mom always says, about women having implants, "Why would anyone want even more of this baggage to carry around? Reduction I understand, but implants? No, I don't get that." So why the sudden turnaround? Is mom having body image issues? What's up?
Excuse me a second - sheesh, doesn't she know I'm communicating with my public??
"WHAT, MOM?" "Huh? Dental implant? Wha's that?"
Oh.. well never mind..

Slowing Down the Pace
It's Spring --my favorite time of year -- again -- already! I know its cliche to say that time is passing so quickly... but, it's cliche because it is so true!. I've decided that because I can't slow the pace of passing time, I will slow the pace of myself, my life. I'll slow down, do things deliberately, calmly, mindfully.
If my slower pace leaves me in your way, as you rush through life, please feel free to zoom around me, shaking your fist and swearing as you do, if you must. It's okay and I won't even mind, because life is just too short to live intolerant and offended.
But, if you care to join me, we'll savor the time.. and enjoy each other's company. Come on, let's go sit in bright yellow chairs, enjoy a tall cold drink and share some laughter and time together. Maybe together we can slow down the pace of passing time.

Grateful
I had an email notifying me that a comment had been made to my blog. Now that was a surprise since I hadn't posted anything since September. It was my online friend, Linda, saying she was concerned about me because of the tornado activity we had in this part of the country last weekend. I appreciate your concern - thanks, Linda!!
I'm glad to report that I, and my family, were out of the path of these twisters. But, my heart goes out to all those that were personally affected.
I've met some wonderful people through blogging! You all know who you are... :)
